WILSON — On January 1 when the clock struck midnight, people cheered as the new year began and Amanda Knight celebrated becoming the newest owner of the Wilson Nite Club.
Since the new year, Knight along with her fiancé and business partner, Jeremy Hillstead have spent countless hours changing the look of the inside of the bar/restaurant.
Currently in the bar area there is a new wood bar top and high tables. The walls have been given a fresh look with new paint and the old paneling ripped off to open things up a bit.
The biggest change took place in the dining room where the tables were replaced with high top tables and stools to give it a more “bar” like atmosphere.
To compliment that idea, there is a newly crafted wet bar in the dining room where the buffet and salad bar used to sit.
The stage has been cleared as well on the east end of the room so entertainment of bands, DJ’s etc can play and people can dance.
As for the replacement of the buffet, Knight thought that the quality of the meal being served would be better on a plate, which is how the Friday Night Fish Fry will be handled now.
Aside from that, there are only a few minor changes to the restaurant part of the Nite Club. Food specials will still be offered and the kitchen will be open during regular hours of business.
Knight herself is no stranger to the Nite Club as she worked there for nearly four years doing managerial duties like hiring and bookkeeping as well as tending bar, waitressing and cooking.
Knight has been driven to succeed in business after earning her Associates Degree and then her Bachelor’s Degree. She is now currently taking courses online to receive her Master’s Degree in Business.
Outside of the bar business, she is not only a busy woman with school, she is also a mom to her two children, James and Aubrie.
The bar has become Amanda and Jeremy’s new “baby” now and they both are looking forward to being busy and having fun with their latest adventure.
