News for the week of January 6th – 12th
With the holidays behind us, we spent Monday morning “undecorating” the Big Yellow House. With everyone lending a hand, it made for a quick work. As always, it is sad to see the beautiful decorations be boxed up and put away. The afternoon found another visit from Mrs. Right and Mr. Left. We played this game during the holidays and had so much fun we decided they should visit again. This time instead of presents, Mrs. Right and Mr. Left brought cold, hard cash. After an hour of passing the present, many went away a little extra cash in their pockets.
Tuesday morning our weekly volleyball teams met in the East Dining Room. The residents love to play our version of this game and can become very competitive. But usually at the end, we declare everyone a winner. Cribbage was the name of the game on Ridge Crest as Al, Toby, Vern and Gus enjoyed an hour of homemade cookies, hot coffee and fast flying cards! The afternoon found our Bingo enthusiasts in the Square. All went away with bags full of treats. Volunteers Michelle and Patty always make sure this fun hour runs smoothly. Just before supper we were blessed to have Jordan Herrick come and spend time with us. Not only does he bring us an inspiring message, but also sings some of our favorite hymns.
Pastor Wik led us in our Wednesday morning church service. We appreciate him taking the time to come and share with us. We enjoyed his inspiring message, and also singing our favorite hymns. Bob Pecore was the entertainment for the afternoon. Bob drew a large crowd to the Square to listen to his version of many of our favorite old time songs.
Noodle meet Ball started out our Thursday morning as residents gathered for an hour of fun using beach balls and Styrofoam noodles. As the residents hit the ball with the noodles, it was a challenge to see which team could keep the ball on the opponent’s side. In the end, everyone came away a winner and we all had fun and even got in a little exercise in the process. The smell of fresh baked cookies drew both staff and residents to the East Dining Room. Loretta led a group of residents as they mixed up a batch of homemade cookies and put them in the oven to bake. Add a cup of fresh brewed coffee and it’s a wonderful afternoon treat.
We gathered in the Square Friday morning for Gospel Sing a Long. We love picking out our favorite hymns to sing. Kathy and Bruce lead us in this hour of music and prayer. Friday afternoon, Dime Bingo was played in the Square. It is always a great way to end the week.
As many of you know, Colfax Health & Rehab, formerly Area Nursing Home is celebrating over 50 Years of Service to the residents of Colfax and surrounding communities. In 1996, we put together a recipe book containing recipes from residents, families, friends and staff. Several people from the community have requested that I continue to post recipes from that book. This week’s recipe is a great dish to warm you on a cold winter’s day.
This week’s recipe submitted by Mary Ellen Mathews, former Assistant Director of Nursing, current member of Board of Directors.
Chili Con Carne: 1 lb. ground beef, 1 cup sliced onions, 1 tsp. sugar, 4 cups tomatoes, 1 cup tomato juice, 1 tsp. salt, ¼ tsp. ground pepper, 3 tsp. chili powder, 1 can red kidney beans, ½ to 1 cup elbow spaghetti, 1 clove garlic, and ¾ cup diced celery. Directions: In Kettle, brown ground beef until slightly brown. Add remaining ingredients and mix well. Cover and simmer for at least ½ hour or until vegetables are done. Note: May add more chili powder to taste.
